The settings for exporting .vrscene files are located in the V-Ray Common tab of the Render Settings, under the Translator rollout.

When Export to a .vrscene file is enabled, the scene will be translated and exported to a .vrscene file by the V-Ray for Maya translator. The Render option can be disabled so that only the .vrscene export is performed; otherwise the scene will both render and export. Additional options for exporting the scene will become available in the Translator rollout as well, including the ability to separate files by components or frames.
